Step 1
Preheat oven to 350 degrees F (180 degrees C). Line a 9x5-inch loaf pan with parchment paper, so that a little bit of paper hangs out over the edges.
Step 2
Whisk together
All-Purpose Flour (2 cups)
,
Granulated Sugar (1 cup)
,
Baking Powder (1/2 Tbsp)
, and
Salt (1 tsp)
in a large bowl.
Step 3
Cut the
Unsalted Butter (1/2 cup)
into the flour mixture until it is pea sized and resembles course meal.
Step 4
In a medium-sized bowl, whisk together the zest and juice from the
Oranges (3)
,
Eggs (2)
,
Sour Cream (1/3 cup)
, and
Vanilla Extract (1/2 Tbsp)
. Pour into the flour mixture and mix gently until just combined.
Step 5
Fold in the
Fresh Cranberries (1 1/2 cups)
and the
Roasted Walnuts (1/2 cup)
.
Step 6
Pour batter into prepared loaf pan and bake in the preheated oven for about 1 hour until a toothpick comes out clean.
Step 7
Remove from oven and let cool on wire rack for about 15 minutes before removing bread from pan and letting it completely cool on a wire rack.
Step 8
Once cool, whisk together
Powdered Confectioners Sugar (1 cup)
, 1/4 tsp of Orange Zest, and
Roasted Walnuts (1/4 cup)
. Add
Orange (1)
one tablespoon at a time, stirring, until the desired thickness is reached.
Step 9
Place a piece of parchment paper under wire rack that the bread is cooling on and slowly pour glaze over the top of the bread.
