Step 1
Peel the
Garlic (1 clove)
, the
Onion (1)

Zucchini (3)
, and
Potatoes (4)
. Chop them into medium-sized pieces.
Step 2
In a pot with boiling water add the
Eggs (2)
and cook them for 10 minutes.
Step 3
In another pan, add
Olive Oil (as needed)
and add the chopped garlic. When the oil gets hot add the onion, potatoes, and zucchini.
Step 4
Season with
Salt (to taste)

Ground Black Pepper (to taste)

Dried Mixed Herbs (to taste)
, and
Paprika (to taste)

Step 5
Cook everything for few minutes on high heat.
Step 6
Add enough
Vegetable Stock (as needed)
to cover everything in the pot. Once it comes to a boil, cook for 20-25 minutes.
Step 7
Add the
Laughing Cow Swiss Cheese Wedges (3 pieces)
and blend the soup with a stick blender.
Step 8
Peel the boiled egg and chop it very finely, you can do it with a fork crushing the egg onto the chopping board.
Step 9
Top the soup with the chopped egg. Enjoy!
