Mix the Balsamic Vinegar (2 Tbsp) , juice from Lemons (1 1/4) , Extra-Virgin Olive Oil (1/4 cup) , Sea Salt (to taste) , and Freshly Ground Black Pepper (to taste) in a small bowl.
Step 2
In a larger bowl, toss the Fresh Spinach (7 1/2 cups) , Cucumber (1) , and Grape Tomatoes (1 cup) with the dressing.
Step 3
Leave for a couple hours, while tossing every so often, to soak in flavors and take out the bitter spinach taste.
