Into a big bowl, add Water (1 cup), Granulated Sugar (2 Tbsp), and Instant Dry Yeast (1/2 Tbsp). Stir everything together for 2 minutes until the yeast foams up.

Add the Olive Oil (2 Tbsp), All-Purpose Flour (3 cups) and Salt (1 Tbsp). Mix well into a dough. Turn the dough into a floured surface, and kneed until it is smooth and elastic.

Shape the dough into a sausage shape, and cut into 6 even pieces. Roll each piece into a circular shape.

Once you have the flat circular dough, put the pizza mixture into on half of the dough, fold the dough over and pinch together the edges. Using a skewer, poke a couple of steam vents by the side of the pocket.
