Pit the Cherry (1 1/2 cup) and freeze them.
Cut Banana (2) into 1 inch chunks.
Place the banana chunks, 1 cup of the cherries and a splash of Unsweetened Coconut Milk (1 tablespoon) into blender/food processor and blend until just combined.
Add in Dark Chocolate Chunks (1/4 cup) and remaining 1/3 of the cherries, pulse until just combined.
Serve immediately as this is a soft serve ice cream. Top with shaved dark chocolate, cacao nibs or raw chocolate chips. And enjoy!
