Cook the Cauliflower (4 cups), Frozen Mixed Vegetables (2 cups), Zucchini (3), and diced Red Potatoes (3) in water until soft. When they’re soft, mash the vegetables well, in the liquid. Stir in the cooked lentils.

Heat Olive Oil (1 tsp) in a large skillet or pot over medium heat. Add the Red Onion (1),Fresh Ginger (2 Tbsp), Garlic (1 clove), and Tomatoes (3), and cook until the onions have browned and the tomatoes start to break down. About 5-10 minutes.
