Crushed Red Pepper Flakes
Large  Tortillas
2 Tbsp
or Butter
Tzatziki Sauce
2 cups
or Vegan Cream Cheese or Vegan Yogurt
1/4 cup
Dill , roughly chopped
3 cloves
Garlic , grated
1 tsp
Lemon , juiced
Cucumber , grated
squeezed to remove any excess liquid

Author's Notes

The recipe makes roughly 2 cups of tzatziki. Store extra in an airtight container for up to 5 days.


Step 1
To a medium-sized pan heat Olive Oil (1 Tbsp) for 30 seconds on low-medium heat. To the pan, add the White Onion (1) and cook on low-medium heat for 4-5 minutes. You simply want the onions to become golden so do not overcook or burn.
Step 2
To the pan, add the Garlic (3 cloves) and cook for 1 minute before adding the Fresh Spinach (8 cups) . Let the spinach wilt down completely and cook down any excess liquid before adding in the Fresh Herbs (1 handful) , Feta Cheese (1/2 cup) , Green Olives (1 cup) , Sea Salt (1 tsp) , Freshly Ground Black Pepper (1/2 tsp) , and Crushed Red Pepper Flakes (1 dash) .
Step 3
Cook everything down for another 5 minutes then remove it from the heat and let everything cool.
Step 4
Prepare your Tzatziki Sauce by combining Greek Yogurt (2 cups) , Dill (1/4 cup) , Garlic (3 cloves) , Salt (1 tsp) , Ground Black Pepper (1/2 tsp) , the juice of a Lemon (1) , Cucumber (1) , and Olive Oil (3 Tbsp) in a large container. Mix until combined.
Step 5
Place a large Tortillas (4) wrap on a flat surface and cut from the center to the edge of a wrap on one quarter.
Step 6
Begin filling each side of the wrap with your spinach mixture then fold from the bottom left triangle, up the top left triangle. then over to the top right triangle and end at the bottom.
Step 7
Preheat the pan with some Vegan Butter (2 Tbsp) and once melted cook the wrap for 2 minutes on each side on low heat. Watch this carefully as it can burn very quickly.
Step 8
Enjoy with your Tzatziki, a fresh crumbling of feta, and more herbs!
