Potato, Pea and Bacon Soup

Potato, Pea and Bacon Soup is a delicious, warming soup that is perfect for cold days. Potatoes, peas, onion and garlic are boiled in stock until tender. Blended until smooth and topped with crispy fried bacon, this soup is simple to prepare, but big on flavour - give it a go!

Bacon , chopped

Cooking Instructions

Into a large pot, add the Olive Oil (as needed) . Over medium heat, add the Yellow Onion (1) and Garlic (2 cloves) . Cook for 3 minutes until the onions are nice and soft.

Add Potatoes (2.2 lb) , Chicken Stock (4 cups) , and Water (2 cups) to the pot. Season with Salt (to taste) , Ground Black Pepper (to taste) and give the mix a nice stir. Increase the heat to medium-high, put the lid back on the pot, and allow the soup to come to a boil.

Allow the soup to simmer for about 20 minutes.

Add the Frozen Green Peas (2 cups) and give the soup a good stir. After about 2 minutes, use a stick blender to blend the soup in the pot.

Fry the Bacon (2 slices) in a frying pan until it is nice and crispy.

Scatter the bacon over the soup and you are ready to serve. Enjoy!
