Into a large pot, add the Olive Oil (to taste). Over medium heat, add the chopped Yellow Onion (1), and crushed Garlic (2 clove). Cook for 3 minutes until the onions are nice and soft.
Add your chopped Potato (1 kilogram), Chicken Stock (1 liter), and Water (2 cup) to the pot. Season with Salt and Pepper (to taste) and give the mix a nice stir. Increase the heat to medium high, put the lid back on the pot and allow the soup to come to boil.
Allow the soup to simmer for about 20 minutes.
Add the frozen Green Peas (2 cup) and give the soup a good stir. After about 2 minutes, use a stick blender to blend the soup in the pot.
Chop down the Bacon (2 slice) and fry them up in a frying pan until they are nice and crispy
Scatter the bacon over the soup and you are ready to serve. Enjoy!
