Step 1
Into a large pot, add the
Olive Oil (as needed)
. Over medium heat, add the
Yellow Onion (1)
and
Garlic (2 cloves)
. Cook for 3 minutes until the onions are nice and soft.
Step 2
Add
Potatoes (6 2/3 cups)
,
Chicken Stock (4 cups)
, and
Water (2 cups)
to the pot. Season with
Salt (to taste)
,
Ground Black Pepper (to taste)
and give the mix a nice stir. Increase the heat to medium-high, put the lid back on the pot, and allow the soup to come to a boil.
Step 3
Allow the soup to simmer for about 20 minutes.
Step 4
Add the
Frozen Green Peas (2 cups)
and give the soup a good stir. After about 2 minutes, use a stick blender to blend the soup in the pot.
Step 5
Fry the
Bacon (2 slices)
in a frying pan until it is nice and crispy.
Step 6
Scatter the bacon over the soup and you are ready to serve. Enjoy!
