Into a large pot, add the Olive Oil (as needed). Over medium heat, add the Yellow Onion (1) and Garlic (2 cloves). Cook for 3 minutes until the onions are nice and soft.

Add Potatoes (2.2 lb), Chicken Stock (4 cups), and Water (2 cups) to the pot. Season with Salt (to taste), Ground Black Pepper (to taste) and give the mix a nice stir. Increase the heat to medium-high, put the lid back on the pot, and allow the soup to come to a boil.
