In a pan over medium heat with Olive Oil (as needed) cook together Garlic (2 cloves) and Onion (1) until the onions are softened.

Next add the Ground Ginger (1/2 Tbsp), Curry Powder (1 Tbsp), Chickpeas (2 cans), Ground Cumin (1 tsp), and Water (1 cup).

Season the mixture with Salt (to taste) and Ground Black Pepper (to taste), then stir to combine. Add the Fresh Oregano (1 tsp) and Tomatoes (2). After the mixture gets to boil, put the lid on, turn the heat down, and let the it simmer for about 10 minutes.
