In a large bowl, whisk together All-Purpose Flour (2 cup), Baking Powder (2 teaspoon), Salt (1/2 teaspoon), Ground Cinnamon (1/2 teaspoon), and Ground Nutmeg (1/8 teaspoon).
Add Apple Cider (1 1/2 cup) and Egg (2) and whisk until combined.
Heat a skillet on medium high and add grease the pan with some butter. Use a 1/3 cup measuring cup to portion and drop batter into the pan.
Sprinkle with Cinnamon Sugar (to taste), if desired, and flip when bubbles start to pop on the surface.
Cook for about a minute or two, until browned. Add to a plate and enjoy!
