Step 1
In a large bowl, whisk together All-Purpose Flour (2 cups) , Baking Powder (1/2 Tbsp) , Salt (1/2 tsp) , Ground Cinnamon (1/2 tsp) , and Ground Nutmeg (1/8 tsp) .
Step 2
Add Apple Cider (1 1/2 cups) and Eggs (2) and whisk until combined.
Step 3
Heat a skillet on medium high and add grease the pan with some butter. Use a 1/3 cup measuring cup to portion and drop batter into the pan.
Step 4
Sprinkle with Cinnamon Sugar (to taste) , if desired, and flip when bubbles start to pop on the surface.
Step 5
Cook for about a minute or two, until browned. Add to a plate and enjoy!
