Prepare Yoder Pellet Smoker or other BBQ grill or smoker for indirect cooking at 350 degrees F (180 degrees C).
In a large bowl combine
80/20 Lean Ground Beef (2 lb)
Breadcrumbs (2 cups)
Onions (1 cup)
Tomatoes (1 cup)
Pimiento Peppers (1/4 cup)
Fresh Parsley (1/4 cup)
Garlic (2 cloves)
Killer Hogs The A.P. Rub (1 Tbsp)
Mix well by hands to evenly distribute ingredients.
Spray a mini loaf pan with
Vegetable Oil Cooking Spray (as needed)
and line each cavity with a slice of
Center Cut Bacon (8 slices)
Fill each cavity with meat mixture.
Place pan in smoker and cook for 45 minutes or until internal temperature reaches 160 degrees F (71 degrees C).
To make BBQ Glaze mix
Killer Hogs BBQ Rub (1 cup)
Brown Sugar (2 Tbsp)
Dijon Mustard (1 Tbsp)
Hot Sauce (1 Tbsp)
Carefully remove each mini meat loaf from pan and place on wire rack. Glaze with warm BBQ Glaze and return to the smoker for 15 minutes or until internal temp reaches 165 degrees F (75 degrees C) minimum.
Remove from smoker and serve with
Mashed Potatoes (to taste)
garnished with a pinch of
Fresh Parsley (as needed)
