Step 1
Add the Beets (1 1/3 cups) , Goat Cheese (1/3 cup) , Olive Oil (2 Tbsp) , Garlic Oil (1 Tbsp) , Lemon Juice (2 Tbsp) , and Fresh Thyme (1/2 Tbsp) to a food processor or blender and blend until smooth and creamy.
Step 2
Adjust lemon, garlic oil, and thyme flavors according to taste and season with additional salt and pepper if desired.
Step 3
If serving immediately, pour the desired amount of sauce over freshly cooked pasta. Fold the sauce into noodles using a silicone spatula. Garnish with additional goat cheese and fresh thyme. Enjoy!
