Add the Beet (6.5 ounce), Goat Cheese (3 ounce), Olive Oil (2 tablespoon), Garlic Oil (1 tablespoon), Lemon Juice (2 tablespoon), and Fresh Thyme (2 teaspoon) to a food processor or blender and blend until smooth and creamy.
Adjust lemon, garlic oil, and thyme flavors according to taste and season with additional salt and pepper if desired.
If serving immediately, pour the desired amount of sauce over freshly cooked pasta. Fold the sauce into noodles using a silicone spatula. Garnish with additional goat cheese and fresh thyme. Enjoy!
