Step 1
Heat
Oil (1/4 cup)
in a pan.
Step 2
Add
Potatoes (2)
and shallow fry them till light brown. Don’t let them become mushy.
Step 3
Once light brown, leave 2 tablespoons of oil in the pan and remove excess. Add
Onion (1)
and cook till golden brown.
Step 4
Add
Tomatoes (2)
along with
Salt (to taste)
,
Ground Turmeric (1 tsp)
,
Ground Coriander (1/2 Tbsp)
, and
Red Chili Powder (1/2 tsp)
and mix well.
Step 5
Cover the pan and cook for 5 minutes or till the gravy starts releasing oil.
Step 6
Add
Fresh Spinach (8 1/3 cups)
and cover again. Cook for 2-3 minutes on low to medium heat, then add fried potatoes and
Garam Masala (1/2 tsp)
. Mix well, cover, and cook for a minute on low heat.
Step 7
Serve hot and enjoy!
