Heat Oil (4 Tbsp) in a pan.

Add Potatoes (2) and shallow fry them till light brown. Don’t let them become mushy.

Once light brown, leave 2 tablespoons of oil in the pan and remove excess. Add Onion (1) and cook till golden brown.

Add Tomatoes (2) along with Salt (to taste), Ground Turmeric (1 tsp), Ground Coriander (2 tsp), and Red Chili Powder (1/2 tsp) and mix well.

Cover the pan and cook for 5 minutes or till the gravy starts releasing oil.

Add Fresh Spinach (9 oz) and cover again. Cook for 2-3 minutes on low to medium heat, then add fried potatoes and Garam Masala (1/2 tsp). Mix well, cover, and cook for a minute on low heat.
