Our BBQ Chicken Grilled Cheese is a spicy chicken sandwich with the added gooey goodness of grilled cheese. Grilled and shredded chicken thighs are tossed with your favorite BBQ sauce, then layered onto soft, buttered bread and topped with shredded mozzarella, cheddar and creamy avocado.

Author's Notes

Makes 3 large sandwiches. I used a store-bought rotisserie chicken, but feel free to roast or poach your own chicken breast.

Step 1
Heat 1 tsp of Oilve Oil in a small pan. When hot, add the Red Onion (1/2) and sauté for about 5 minutes until soft. Remove from the heat and set aside.

In a small bowl, combine the Chicken Breasts (1 cup) and Barbecue Sauce (1/3 cup) .
Step 3
In a separate bowl, combine the Shredded Part-Skim Mozzarella Cheese (1 cup) and Shredded Cheddar Cheese (1 cup) .
Step 4
Now it’s time to build your grilled cheese sandwiches! This recipe makes three sandwiches, so repeat the process for each 2 pieces of bread. To assemble each sandwich, brush one side of each slice of Whole Wheat Sourdough (6 slices) with the Olive Oil (2 Tbsp) , using roughly 1 teaspoon per slice of bread.
Step 5
Place the bread oil-side down on a cutting board. Top one piece of bread with 1/3 cup of the combined cheese and 1/3 cup of barbecue chicken.

Add 1/3 of the Avocado (1) to each.
Step 7
Then add 1/3 of the sauteed onions and 1/3 of the Fresh Cilantro Leaves (3 Tbsp) .
Step 8
Top with another 1/3 cup of cheese in an even layer.
Step 9
Add the second piece of bread with the oil-side facing out. Heat a large non-stick pan or skillet over medium heat. When hot, add the sandwiches and cover with a lid. Cook for about 4 minutes until the underside is golden brown.
Step 10
Flip the sandwiches and cook for 3-4 minutes more. Remove your grilled cheese from the pan and serve immediately with extra Barbecue Sauce (to taste) and Ranch Dressing (to taste) for dipping.
