Author's Notes

Wontons can be made ahead of time! Just freeze them on a baking sheet after assembling, then store in a plastic ziplock bag in the freezer once frozen. Cook by simply boiling the wontons straight from the freezer.

Step 1
Chop the Bok Choy (to taste) and Scallions (2) . Set the bok choy aside.
Step 2
Combine Ground Pork (8 oz) , Egg (1) , chopped scallions, Soy Sauce (1 Tbsp) , Ground Black Pepper (to taste) and Fresh Ginger (to taste) .
Step 3
Place 3/4 of a teaspoon of filling in the center of one of the Wonton Wrappers (35) .
Step 4
Seal using Milk (to taste) or beaten egg around the edges and make sure to press out any air.
Step 5
Then wrap the wonton. Continue with the remainder of wrappers.
Step 6
Once all wontons are ready, combine Vegetable Stock (32 fl oz) , Chicken Stock (32 fl oz) , and Celery (2 stalks) in a large pot and let it come up to a full boil.
Step 7
Place wontons in one at a time stirring so they do not stick to each other. Add bok choy leaves. Reduce heat to medium and cook for 15 minutes.
Step 8
