Add Olive Oil (2 Tbsp) to a pan on medium heat and let it get hot. Add Onion (1) and saute until translucent.

Mix in Garlic (2 cloves), saute for 30 seconds, then add Green Bell Peppers (4 Tbsp), Tomatoes (2), Carrots (1/2 cup), Chickpeas (2 cans), Dried Basil (as needed), Dried Parsley (1 tsp), Dried Oregano (as needed), and Tomato Paste (2 Tbsp).

Add Water (2 cups), then mix everything together until tomato paste is dissolved. Stir in Salt (1 tsp) and Ground Black Pepper (to taste).

Bring the mixture to a boil and let it simmer for 15 - 20 minutes, or until it thickens.

Add Cayenne Pepper (as needed), if desired. Adjust seasoning and serve with Naan bread or rice. Serve and enjoy!
