Roasting tomato and feta cheese make this pasta sauce really delicious, plus adding the sweetness and spiciness from agave syrup and chili flakes will level up this dish!

Cooking Instructions

Step 1
Preheat the oven to 400 degrees F (200 degrees C).
Step 2
Roughly chop the Fresh Basil Leaves (1 handful) and Sun-Dried Tomatoes (1/2 cup) . Set the basil leaves aside.
Step 3
Place all the Cherry Tomatoes (4 1/2 cups) , sun-dried tomatoes, and Garlic (2 cloves) in the baking dish. Drizzle with Olive Oil (1 Tbsp) and season with Salt (1/2 tsp) , Ground Black Pepper (1/4 tsp) , Dried Oregano (1/2 tsp) , and Ground Cumin (1/2 tsp) . Toss until well combined.
Step 4
Make the space in the middle of the baking dish and place the Feta Cheese (1 block) in. Drizzle Olive Oil (1 Tbsp) and Agave Syrup (1 Tbsp) on the feta, then sprinkle with Salt (1/2 tsp) , Ground Black Pepper (1/4 tsp) , and Crushed Red Pepper Flakes (1 tsp) .
Step 5
Bake for 30 minutes.
Step 6
After the tomatoes have baked for 15 minutes, start to cook the pasta. Add some salt to the boiling water. Cook the Farfalle Pasta (8 oz) until al dente according to the directions on the package. Occasionally stir to prevent the pasta from sticking to the bottom of the pot. Once cooked, reserve ½ cup of pasta water and drain the pasta.
Step 7
Remove the baked feta and tomatoes out of the oven and immediately stir and mash the feta, garlic, and tomatoes together.
Step 8
Add in the cooked pasta and chopped basil. Stir to combine. If the sauce is too thick, add some pasta water.
Step 9
Garnish with red pepper flakes and fresh basil leaves. Serve.
