In a large soup pot, add a generous splash of
Olive Oil (1 Tbsp)
over medium-high heat. Add the
Garlic (3 cloves)
and stir until fragrant, 1 minute.
Celery (5 stalks)
Freshly Ground Black Pepper (1 tsp)
, and cook until the vegetables begin to soften, 4-5 minutes.
Rotisserie Chicken (1)
, lemon juice,
Bay Leaf (1)
Chicken Broth (8 cups)
to the pot. Simmer for an additional 10-15 minutes, until the vegetables have softened.
Cheese Tortellini (1 pckg)
and cook according to directions on the package.
Taste and adjust seasoning as needed. Serve in large bowls, garnished with
Fresh Parsley (to taste)
