Cooking Instructions

Step 1
In a large soup pot, add a generous splash of Olive Oil (1 Tbsp) over medium-high heat. Add the Onion (1) and Garlic (3 cloves) and stir until fragrant, 1 minute.
Step 2
Add the Celery (5 stalks) , Carrots (2) , Freshly Ground Black Pepper (1 tsp) , and Lemon (1) , and cook until the vegetables begin to soften, 4-5 minutes.
Step 3
Add the Rotisserie Chicken (1) , lemon juice, Bay Leaf (1) , and Chicken Broth (8 cups) to the pot. Simmer for an additional 10-15 minutes, until the vegetables have softened.
Step 4
Add the Cheese Tortellini (1 pckg) and cook according to directions on the package.
Step 5
Taste and adjust seasoning as needed. Serve in large bowls, garnished with Fresh Parsley (to taste) and Ground Black Pepper (to taste) .
