Preheat the oven to 400 degrees F (200 degrees C).
In a large mixing bowl, toss
Olive Oil (1 Tbsp)
Salt (1/4 tsp)
Ground Black Pepper (1/4 tsp)
Sweet Potatoes (1 1/2 cups)
until well combined. Lay sweet potatoes onto a parchment-lined baking sheet in one single layer.
Bake in the oven for 15-20 minutes, or until they become soft and browned on the edges. Once it’s done, set it aside to cool slightly.
In a large mixing bowl, combine roasted sweet potatoes with
Arugula (5 cups)
Vinaigrette (2 Tbsp)
, gently toss together, and sprinkle
Feta Cheese (3/4 cup)
Sunflower Seeds (to taste)
