Preheat the oven to 400 degrees F (200 degrees C).

In a large mixing bowl, toss Olive Oil (1 Tbsp), Salt (1/4 tsp), and Ground Black Pepper (1/4 tsp) with Sweet Potatoes (8 oz) until well combined. Lay sweet potatoes onto a parchment-lined baking sheet in one single layer.

Bake in the oven for 15-20 minutes, or until they become soft and browned on the edges. Once it’s done, set it aside to cool slightly.

In a large mixing bowl, combine roasted sweet potatoes with Arugula (5 cups), Apples (2), and Vinaigrette (2 Tbsp), gently toss together, and sprinkle Feta Cheese (3/4 cup) on top.

Garnish with Sunflower Seeds (to taste) and serve.
