Smoked fish is so flavorful and bold enough to stand up to many seasonings. To complement the mild flavor of smoked mahi-mahi, we gave this spread a tropical touch of smoked pineapple, a kick from jalapeño peppers, and balanced it out with herbal notes of fresh thyme.

Freshly Ground Black Pepper
In the bowl of a standing mixer with the paddle attachment, combine Cream Cheese (3/4 cup), Sour Cream (1/3 cup), Scallions (1 bunch), Fresh Thyme Leaves (1 Tbsp), Salt (to taste), Freshly Ground Black Pepper (to taste), and Lemon Zest (1). Mix on low speed until well blended.
Add half of the Mahi-Mahi Fillets (8 oz), Pineapples (1/4 cup), Jalapeño Peppers (2), and mix on low speed until thoroughly blended. Adjust the seasonings to taste. Add a few shakes of Hot Sauce (to taste) if it is not spicy enough.
Stir in the remaining Mahi-Mahi Fillets (8 oz) a little at a time, blending gently by hand, until it is incorporated.
Chill in the refrigerator for at least 1 hour.
Serve with crackers or toasted baguette slices. Enjoy!
