Step 1
In the bowl of a standing mixer with the paddle attachment, combine
Cream Cheese (3/4 cup)

Sour Cream (1/3 cup)
,
Scallions (1 bunch)
,
Fresh Thyme Leaves (1 Tbsp)
,
Salt (to taste)
,
Freshly Ground Black Pepper (to taste)
, and
Lemon Zest (1)
. Mix on low speed until well blended.
Step 2
Add half of the
Mahi-Mahi Fillets (8 oz)
,
Pineapples (1/4 cup)
,
Jalapeño Peppers (2)
, and mix on low speed until thoroughly blended. Adjust the seasonings to taste. Add a few shakes of
Hot Sauce (to taste)
if it is not spicy enough.
Step 3
Stir in the remaining
Mahi-Mahi Fillets (8 oz)
a little at a time, blending gently by hand, until it is incorporated.
Step 4
Chill in the refrigerator for at least 1 hour.
Step 5
Serve with crackers or toasted baguette slices. Enjoy!
