In the bowl of a standing mixer with the paddle attachment, combine Cream Cheese (3/4 cup), Sour Cream (1/3 cup), Scallion (1 bunch), Fresh Thyme Leaves (1 Tbsp), Salt (to taste), Freshly Ground Black Pepper (to taste), and Lemon (1). Mix on low speed until well blended.

Add half of the Mahi-Mahi Fillets (8 oz), Pineapple (1/4 cup), Jalapeño Peppers (2), and mix on low speed until thoroughly blended. Adjust the seasonings to taste. Add a few shakes of Hot Sauce (to taste) if it is not spicy enough.
