Leg of Lamb
Sea Salt Flakes
Ground Black Pepper
Pat dry the Leg of Lamb (3.5 lb) with a paper towel then rub with Olive Oil (0.5 oz), season with Sea Salt Flakes (to taste) and Ground Black Pepper (to taste).
Cut slits in lamb and insert Garlic (3 cloves) and Fresh Rosemary (3 sprigs). Then place Fresh Thyme (3 sprigs) on top.
Preheat oven to 200 degrees C (400 degrees F) steam roast. Put lamb leg on a wire rack over a roasting tray.
Put the roasting tray into shelf 2 (middle of the oven). Roast for 70 minutes.
Remove tray from the oven and loosely cover lamb leg with foil, rest for 10-15 minutes before serving.
Meanwhile, put Butter (2 1/2 Tbsp) in a pan over medium heat. Add Baby Potatoes (4), Carrots (2), and Fresh Rosemary (1 sprig). Stir fry until vegetables are golden brown in color.
Drizzle with olive oil. Serve.
Yields 4-6 servings.
Cooking time is around 46-48 minutes per kilo. In this recipe the result is medium-rare.
