Step 1
Pat dry the
Leg of Lamb (3.5 lb)
with a paper towel then rub with
Olive Oil (0.5 oz)
, season with
Sea Salt Flakes (to taste)
and
Ground Black Pepper (to taste)
.

Cut slits in lamb and insert
Garlic (3 cloves)
and
Fresh Rosemary (3 sprigs)
. Then place
Fresh Thyme (3 sprigs)
on top.
Step 3
Preheat oven to 200 degrees C (400 degrees F) steam roast. Put lamb leg on a wire rack over a roasting tray.
Step 4
Put the roasting tray into shelf 2 (middle of the oven). Roast for 70 minutes.
Step 5
Remove tray from the oven and loosely cover lamb leg with foil, rest for 10-15 minutes before serving.
Step 6
Meanwhile, put
Butter (2 1/2 Tbsp)
in a pan over medium heat. Add
Baby Potatoes (4)
,
Carrots (2)
, and
Fresh Rosemary (1 sprig)
. Stir fry until vegetables are golden brown in color.
Step 7
Drizzle with olive oil. Serve.
