Shred the Manchego Cheese (1 cup), and finely dice the Smoked Ham (1 cup).
In a large bowl combine All-Purpose Flour (1 cup), Cornmeal (1 cup), Baking Powder (2 teaspoon), Baking Soda (1/2 teaspoon) and Salt (1/4 teaspoon).
Whisk together and set aside.
Melt the Butter (4 tablespoon).
Shake the Buttermilk (2 cup) well. In a small bowl, add buttermilk, Egg (2) and Maple Syrup (1/4 cup). Whisk thoroughly to combine wet ingredients.
Add wet ingredients to dry ingredients and stir until just mixed.
Stir in melted butter.
Add ham and cheese.
To make the waffles, preheat the waffle iron. Lightly coat with vegetable spray if necessary.
Scoop batter onto the center of the waffle iron. Close the lid and bake until browned and crisp.
Serve waffles immediately or place them in a single layer on a rack in a 200 degrees F (95 degrees C) oven while you continue to make the rest of the waffles.
Serve with butter and maple syrup. Enjoy!
