Serves 4

15 Ingredients

2 Sweet Potato

2 cup All-Purpose Flour

3/2 cup Rolled Oats

1 tsp Baking Soda

2 tsp Ground Cinnamon

1/2 tsp Salt

1/2 tsp Ground Nutmeg

1/2 tsp Ground Cloves

1/2 tsp Ground Ginger

4 oz Unsalted Butter

1/2 cup Brown Sugar

1/2 cup Caster Sugar

1 Large Egg

1 tsp Vanilla Extract

3/2 cup Chocolate Chips

7 Steps

Steps 1

Peel and chop Sweet Potato into chunks. Bring a large pot of water to a boil and add sweet potatoes, cooking for about 15 minutes, until fork tender. Drain water and mash potatoes, then set aside to cool some.

Steps 2

In a medium bowl combine All-Purpose Flour, Rolled Oats, Baking Soda, Salt, Ground Nutmeg, Ground Cinnamon, Ground Cloves and Ground Ginger. Set aside.

Steps 3

Combine Unsalted Butter, Brown Sugar, and Caster Sugar until smooth, then add Large Egg and Vanilla Extract. Once sweet potato has cooled off a bit (should be warm, not hot) add it to the sugar mixture.

Steps 4

Stir flour mix into sweet potato mix, then fold in Chocolate Chips.

Steps 5

Preheat oven to 350 degrees F (175 degrees C).

Steps 6

Scoop dough onto a greased or parchment paper-lined baking sheet. Bake for 10 to 12 minutes, or until slightly crisp on the outside.

Steps 7

Let cool on the pan for 20 minutes before transferring to a container.
