In a small jug, add Olive Oil (1/4 cup), Lemon Juice (1/3 cup), Dried Oregano (1 teaspoon), Onion Powder (1 teaspoon), Garlic (2 clove), Salt (1 teaspoon), and Freshly Ground Black Pepper (to taste). Stir together.
In a slow cooker, add Chicken Breast (1 kilogram), Red Potato (600 gram) and Baby Carrots (250 gram). Pour the marinade mixture over everything. Cover and cook on high for 4 hours, or on low for 8 hours.
Once the chicken and veggies are tender, serve!
