In a frying pan, add Olive Oil (2 tablespoon), Garlic (2 clove) and Yellow Onion (1). Cook over medium heat until onions have softened.
Add Lean Ground Beef (500 gram). Cook for 8 minutes, or until beef is browned.
Add Red Bell Pepper (1), Sweet Corn Kernels (125 gram), Chili Powder (1 teaspoon) and Paprika (1 teaspoon). Cook, stirring, for 2-3 minutes.
Add Canned Diced Tomatoes (14 ounce). Reduce the temperature to low and allow to simmer for 5 minutes, or until the mixture thickens slightly. Season with Salt (to taste).
Switch off the heat and allow beef mixture to cool for 10 minutes.
In a 20-centimeter springform tin, layer one of the Tortilla (4). Spread 1/3 of the beef mixture over the tortilla and sprinkle with 1/4 of the Cheddar Cheese (2 cup). Repeat the same layers until all ingredients are used up.
Bake at 180 degrees C (350 degrees F) for 15-20 minutes, or until the cheese on top has melted.
Allow to cool for 5 minutes.
