Step 1
Boil a pot of water. When bubbling, carefully add
Gnocchi (1.1 lb)
. When the gnocchi bob to the surface, they're done and you can scoop them out with a slotted spoon. Drain on a paper towel.
Step 2
In a deep fry pan, add a bit of
Olive Oil (as needed)
. Over medium to high heat, add
Yellow Onion (1)
,
Garlic (2 cloves)
, and
Bacon (7 oz)
. Stir for 3-4 minutes or until the onion has softened.
Step 3
Add the
Red Chili Pepper (1)
and
Canned Diced Tomatoes (1 3/4 cups)
then stir to mix. Reduce the heat slightly and let simmer uncovered for five minutes or until the mixture thickens slightly.
Step 4
Season with
Salt (to taste)
and
Ground Black Pepper (to taste)
and add in the gnocchi. Transfer to a casserole dish and sprinkle with some
Cheese (1 cup)
. Cook at 200 degrees C (400 degrees F) for 10 to 15 minutes or until the cheese is melted and bubbly.
