Potatoes , cubed
3 cups
Chicken Broth

Medium Carrot , diced
1
Medium Onion , diced
1 cup
Evaporated Milk
Half and Half
2 cups
Cheddar Cheese , shredded
to taste

Directions

Step 1
Place Potatoes (6 cups) , Carrot (1) , Onion (1) , Chicken Broth (3 cups) and Salt (to taste) . Cover, cook on LOW 6 to 7 hours or on HIGH 3 to 3-1/2 hours or until vegetables are tender/soft.
Step 2
Stir in Evaporated Milk (1 cup) and Ground Black Pepper (to taste) . Cover, cook on HIGH for 15 minutes.
Step 3
urn off heat. Let stand, uncovered, 5 minutes. Stir in Cheddar Cheese (2 cups) until melted. Adjust seasoning.
Step 4
Serve and enjoy!
