Slice the French
into 6 1-inch thick slices. Coarsely chop the
Fresh Spinach (1 cup)
. Set aside.
In a medium bowl, beat the
with a fork and season with
Salt (to taste)
Ground Black Pepper (to taste)
Olive Oil (3 Tbsp)
in a large frying pan over medium-high heat.
Mix chopped spinach into the eggs. Soak the slices of baguette in the egg and pierce with a fork here and there. This will help to really soak the bread with the egg mixture for a softer center. Spread the spinach evenly on the bread.
Place the bread slices in the greased, hot frying pan and cook until golden brown for about 2-3 minutes. Flip and cook for another 2-3 minutes. Serve immediately.
