Place the Bacon (6 slice) in a cold skillet and cook over medium heat until crispy. Remove the bacon from the skillet and drain on paper towels. Chopped the bacon and set aside.
In a cast-iron skillet, add Butter (1/4 cup) Place in oven until melted.
In a mixing bowl, add Large Egg (2), Buttermilk (3/4 cup), and Whole Milk (3/4 cup). Whisk together until smooth.
In another mixing bowl, add Granulated Sugar (1/3 cup), Cornmeal (1 cup), All-Purpose Flour (1 cup), Baking Powder (2 teaspoon), Baking Soda (1/2 teaspoon), Salt (1/2 teaspoon), Cheddar Cheese (6 ounce), Scallion (1/2 cup) and Chopped, Cooked Bacon. Mix until incorporated.
Combine wet and dry ingredients. Mix until just incorporated. Add Melted Butter (1/4 cup) and stir through.
Transfer mixture to hot cast-iron skillet. Bake at 375 degrees F (190 degrees C) for 30 minutes, or until a toothpick inserted into the center comes out clean.
