To the blender/food processor add Coconut Vinegar (1 Tbsp), Mashed Banana, Eggs (3), Baking Powder (1 tsp), Baking Soda (1/2 tsp), Maple Syrup (1/4 cup), Vanilla Extract (1 tsp) and Ground Cinnamon (1 tsp). Pulse until all ingredients are combined

Transfer the banana bread batter to the prepared baking pan. Smooth into an even layer and top it off with sliced banana and a sprinkle of oats. Bake at 360 degrees F (180 degrees C) for 30-45 min.
