Step 1
Place Gluten-Free Rolled Oats (3 cups) into a blender or food processor and pulse until flour.
Step 2
Inside a bowl, mash the Bananas (4) .
Step 3
To the blender/food processor add Coconut Vinegar (1 Tbsp) , Mashed Banana, Eggs (3) , Baking Powder (1 tsp) , Baking Soda (1/2 tsp) , Maple Syrup (1/4 cup) , Vanilla Extract (1 tsp) and Ground Cinnamon (1 tsp) . Pulse until all ingredients are combined
Step 4
Fold in the Fresh Blueberries (2/3 cup) .
Step 5
Transfer the banana bread batter to the prepared baking pan. Smooth into an even layer and top it off with sliced banana and a sprinkle of oats. Bake at 360 degrees F (180 degrees C) for 30-45 min.
Step 6
Remove from the oven and let the bread cool down on a wire rack.
