Place Gluten-Free Rolled Oats (3 cup) into a blender or food processor and pulse until flour.
Inside a bowl, mash the Banana (4).
To the blender/food processor add Coconut Vinegar (1 tablespoon), Mashed Banana, Egg (3), Baking Powder (1 teaspoon), Baking Soda (1/2 teaspoon), Maple Syrup (1/4 cup), Vanilla Extract (1 teaspoon) and Ground Cinnamon (1 teaspoon). Pulse until all ingredients are combined
Fold in the Fresh Blueberries (2/3 cup).
Transfer the banana bread batter to the prepared baking pan. Smooth into an even layer and top it off with sliced banana and a sprinkle of oats. Bake at 360 degrees F (180 degrees C) for 30-45 min.
Remove from the oven and let the bread cool down on a wire rack.
