Using the lid of the cool whip, trace a circle around the top of the Pumpkin (1). Use your nifty pumpkin carver and carve a circle. Check to see if the cool whip tub fits, otherwise you may need to carve some more!
Scrape out the guts and seeds.
In a large bowl, mix the Light Cool Whip (1 tub), Pumpkin Purée (1 can), Instant Vanilla Pudding (1 box), and Pumpkin Pie Spice (1 teaspoon) until combined. Transfer into the tub and place in the pumpkin.
Garnish with Ground Cinnamon (to taste) and serve with Ginger Snap Cookies (to taste). Enjoy!
