Preheat the oven to 190 degrees C (375 degrees F).
Large Egg (1)
Yogurt (1 cup)
Vegetable Oil (1/3 cup)
Vanilla Essence (1/2 tsp)
to a large bowl and whisk to a smooth consistency. Set aside wet ingredient mixture.
In a new large bowl add
All-Purpose Flour (2 cups)
Granulated Sugar (1/2 cup)
Baking Powder (1 1/4 tsp)
Baking Soda (1/2 tsp)
Salt (1/4 tsp)
and mix. Add the
Fresh Blueberries (2 1/3 cups)
and gently mix.
Add the wet ingredients prepared earlier and fold in gently until combined.
Prepare the muffin tray with liners.
Use a ice cream scope or spoon to fill the muffin cups.
Bake for about 15 to 20 minutes.
Remove from the oven, let it cool and enjoy!
