Clean your Red Potatoes (10) and remove any bad spots. Then get a large boiler and bring water to a boil. Add Salt (1 Tbsp) to water. When the water reaches a rolling boil, add potatoes and boil for 10 – 15 minutes. When potatoes are fork tender remove from water and allow to drain.

Combine Mayonnaise (2 cups), Yellow Mustard (1 Tbsp), Eggs (4), Pickles (1/2 cup), Scallion (1 bunch), Celery (1 stalk), Salt (1 tsp), Ground Black Pepper (1 tsp) in a separate bowl. Taste and add more salt and pepper if desired. Once combined fold dressing onto potatoes lightly until all potatoes are covered.
