Step 1
Clean your
Red Potatoes (10)
and remove any bad spots. Then get a large boiler and bring water to a boil. Add
Salt (1 Tbsp)
to water. When the water reaches a rolling boil, add potatoes and boil for 10 – 15 minutes. When potatoes are fork tender remove from water and allow to drain.
Step 2
Combine
Mayonnaise (2 cups)
,
Yellow Mustard (1 Tbsp)
,
Eggs (4)
,
Pickles (1/2 cup)
,
Scallions (5)
,
Celery (1 stalk)
,
Salt (1 tsp)
,
Ground Black Pepper (1 tsp)
in a separate bowl. Taste and add more salt and pepper if desired. Once combined fold dressing onto potatoes lightly until all potatoes are covered.
Step 3
Then it’s time to top this potato salad. First sprinkle
Paprika (to taste)
over the top, then crumble
Wright® Brand Smoked Bacon (1 lb)
over the top. Then add
Scallions (2)
to the top for color.
