Clean your Red Potato (10) and remove any bad spots. Then get a large boiler and bring water to a boil. Add Salt (1 tablespoon) to water. When the water reaches a rolling boil, add potatoes and boil for 10 – 15 minutes. When potatoes are fork tender remove from water and allow to drain.
Combine Mayonnaise (2 cup), Yellow Mustard (1 tablespoon), Egg (4), Pickles (1/2 cup), Scallion (5), Celery (1 stalk), Salt (1 teaspoon), Ground Black Pepper (1 teaspoon) in a separate bowl. Taste and add more salt and pepper if desired. Once combined fold dressing onto potatoes lightly until all potatoes are covered.
Then it’s time to top this potato salad. First sprinkle Paprika (to taste) over the top, then crumble Bacon (1 pound) over the top. Then add Scallion (2) to the top for color.
