To make the dough, in a large bowl, whisk together the Unbleached All Purpose Flour (4 cups), Kosher Salt (1/2 Tbsp), and Instant Dry Yeast (1 tsp). Add the Water (2 cups). Using a rubber spatula, mix until the liquid is absorbed and the ingredients form a sticky dough ball.

Cover the bowl with a damp cotton towel or plastic wrap. Set aside in a warm spot to rise for about 1 1/2 hours, until the dough has doubled in volume.

To prepare the pissaladière toppings, in a large sauté pan, heat Extra-Virgin Olive Oil (1 Tbsp) over high heat.

When it begins to shimmer, add Onions (3 cups) and Kosher Salt (1 pinch). Immediately reduce the heat to medium-low and cook, stirring every few minutes, until the onions are lightly golden, about 15 minutes.

Meanwhile, in a food processor, mince the Garlic (2 cloves) and Anchovies (4) together. Add Extra-Virgin Olive Oil (2 Tbsp) [divided] and blend until smooth.

Set a rack in the middle of the oven and preheat it to 425 degrees F (220 degrees C).

Line a 13x18-inch rimmed sheet pan with parchment paper. Pour the remaining Extra-Virgin Olive Oil (3 Tbsp) on the prepared sheet pan.
