Cooking Instructions

Step 1
Cross-score each of the Chicken Drumstick (12) through the flesh, all the way to the bone. Marinate overnight in a paste of Ghee (to taste), Garam Masala (to taste), Ground Cumin (to taste), Ground Allspice (to taste), Lemon Juice (to taste), Yogurt (to taste), Paprika (to taste), Ground Cinnamon (to taste), Fresh Ginger (to taste), Garlic Paste (to taste), and Kosher Salt and Freshly Ground Black Pepper (to taste).
Step 2
Mix Onion (to taste), Red Bell Pepper (to taste), Scallion (to taste), Distilled White Vinegar (to taste), Garlic Oil (to taste), Kosher Salt (to taste), and a bit more garlic paste. Let marinate at least 2 hours.
Step 3
Remove chicken from marinade and simmer remaining marinade for 3 minutes, then use it to baste chicken during broiling.
Step 4
Place chicken on wire rack.
Step 5
Broil chicken on one side for 15 minutes.
Step 6
Turn chicken, brush generously with more of the marinade, and cook until cooked through, about another 15-20 minutes, depending on the size of the drumsticks.
Step 7
Plate chicken with Naan (to taste) and Iceberg Lettuce (to taste).
Step 8
Top chicken with the marinated onions. Serve and enjoy!
