Bring a large pot of water to a boil then add Sweet Potatoes (6) (skin intact). Boil for about 25 minutes, or until fork tender. Preheat oven to 450 degrees F (230 degrees C).

Place potatoes on a well-greased or parchment paper-lined baking sheet and cut three or so shallow slits in the tops of each. With the flat edge of a chef’s knife, gently smash each sweet potato. Drizzle or brush each with Olive Oil (1 Tbsp) and sprinkle with Salt (to taste), Ground Black Pepper (to taste), and Fresh Thyme (2 sprigs). Set aside.
