Step 1
Bring a large pot of water to a boil then add Sweet Potatoes (6) (skin intact). Boil for about 25 minutes, or until fork tender. Preheat oven to 450 degrees F (230 degrees C).
Step 2
Place potatoes on a well-greased or parchment paper-lined baking sheet and cut three or so shallow slits in the tops of each. With the flat edge of a chef’s knife, gently smash each sweet potato. Drizzle or brush each with Olive Oil (1 Tbsp) and sprinkle with Salt (to taste) , Ground Black Pepper (to taste) , and Fresh Thyme (2 sprigs) . Set aside.
