With a pastry cutter or forks, mix Unsalted Butter (3/4 cup) and Shredded Gouda Cheese (1/4 cup) into flour until dough is crumbly and pea-like. Add Water (1/4 cup) one tablespoon at a time, just until dough holds together. Shape dough into a ball, wrap loosely in plastic, and flatten gently with a rolling pin to form a thick, pancake-like disc. Set plastic-wrapped dough in fridge to chill for thirty minutes.
Peel, core, and chop Pink Lady Apple (2) into small chunks. Into the apples mix Lemon Juice (1 teaspoon), Dark Brown Sugar (1/2 cup), Ground Cinnamon (1 teaspoon), Ground Nutmeg (1/4 teaspoon) and All-Purpose Flour (7.5 gram). Add more flour if filling is runny.
