Season both sides of the Cod (1 pound) with pepper and salt.
Heat up Coconut Oil (1 tablespoon) in a pan over medium-high heat.
Sear for about 3 minutes on each side. Once cooked, the fish should easily flake with a fork.
Prepare the salsa: combine Canned Diced Pineapple (10 ounce), Peach (1), Black Bean Salsa (7 ounce), Whole Kernel Corn (4 ounce), Red Onion (1/2), Fresh Cilantro (2 tablespoon), Lime Juice (1 tablespoon) and Jalapeño Pepper (1 tablespoon). Serve and enjoy!
