Season both sides of the Cod (1 lb) with pepper and salt.

Heat up Coconut Oil (1 Tbsp) in a pan over medium-high heat.

Sear for about 3 minutes on each side. Once cooked, the fish should easily flake with a fork.

Prepare the salsa: combine Canned Diced Pineapple (1 2/3 cups), Peach (1), Black Bean Salsa (1 cup), Whole Kernel Corn (3/4 cup), Red Onion (1/2), Fresh Cilantro (2 Tbsp), Lime (1/2), and Jalapeño Pepper (1 Tbsp). Serve and enjoy!
