First, make the sauteed onions. In a small saucepan over medium heat, add Butter (1 Tbsp).

Once the butter has melted add Red Onion (1/2) and Onion Base (as needed). Season with a pinch of Salt (to taste) and saute for 4 minutes or until the onions have softened. Remove from heat and set aside.

To make the masala cheese sauce, add Butter (1 Tbsp) to a pan over medium heat. Once the butter has melted add the All-Purpose Flour (1 Tbsp) and Garlic Base (as needed). Stir and cook for 1 minute.

Add Garam Masala (as needed), Ground Cumin (as needed), and Red Chili Powder (as needed) and stir for 30 seconds. Add Milk (3/4 cup) and bring to a boil. Simmer for 2 minutes.

Turn the heat down to low and stir in the Cheddar Cheese (1 cup). Once the cheese has melted, remove from heat and cover.

To assemble, toss the French Fries (4 cups), with Salt (to taste), Garlic (2 cloves), and Fresh Parsley (1 Tbsp).

Split evenly amongst two bowls and top with the masala cheese sauce and sauteed onions. Sprinkle on some Scallion (1 bunch) and enjoy!
