Step 1
Melt
Butter (2 Tbsp)
in a large saucepan over medium heat. Add
Onions (1/2 cup)
and
Garlic (3 cloves)
, sauté for 5 minutes or until tender, stirring frequently.
Step 2
Add
Cooked Shrimp (1 lb)
and cook for 2 more minutes, stirring frequently. Remove the mixture from the pan, cover and keep warm.
Step 3
Add
Shredded Cheddar Cheese (4 cups)
and
Diced Tomatoes with Green Chilies (1 can)
to the pan. Cook over medium-low heat for 5 minutes or until the cheese thoroughly melts.
Step 4
Stir in the shrimp mixture along with the
Scallions (1/2 cup)
.
Step 5
Garnish with green onion strips. Serve with
Tortilla Chips (to taste)
and, if desired,
Mixed Vegetables (to taste)
