You could make this dish with different kinds of vegetables. Blanching the veggies is optional; but it also depends on the kind of veggies you use, and also whether you like your veggies a little on the raw side, or fully cooked.

You'll want the pan close to the broiler so set the oven tray as close as possible to the top. Preheat oven to 400 degrees F (200 degrees C).
Bok Choy (1 bunch)
(optional) for just a few seconds, then lay them out in a single layer on a baking sheet or baking dish. Drizzle a little bit of
Olive Oil (as needed)
onto the veggies. Add
Salt (to taste)
Ground Black Pepper (to taste)

over the veggies in a single layer. The bacon will cook very quickly so be sure to keep an eye on the dish. It should take only about 5 minutes.
