You'll want the pan close to the broiler so set the oven tray as close as possible to the top. Preheat oven to 400 degrees F (200 degrees C).

Blanch the Bok Choy (1 bunch) (optional) for just a few seconds, then lay them out in a single layer on a baking sheet or baking dish. Drizzle a little bit of Olive Oil (as needed) onto the veggies. Add Salt (to taste) and Ground Black Pepper (to taste).

Lay the Bacon (3 slices) over the veggies in a single layer. The bacon will cook very quickly so be sure to keep an eye on the dish. It should take only about 5 minutes.
