Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
Cut
Brussels Sprouts (7 1/2 cups)
in half.
Step 3
On a large baking sheet, toss Brussels sprouts in
Olive Oil (1/4 cup)
and season with
Salt (to taste)

Ground Black Pepper (to taste)

Smoked Paprika (1/2 tsp)
, and
Cayenne Pepper (1/2 tsp)
.
Step 4
Roast Brussels sprouts for 25-30 minutes until deeply browned.
Step 5
Heat
Honey (1/4 cup)
and 1 1/2 Tbsp zest from the
Orange (1)
together in a small bowl in a microwave oven for 1 1/2 minutes and pour over Brussels sprouts.
Step 6
Before serving, top with crumbled
Queso Fresco (1/4 cup)
and
Pomegranate Seeds (1/2 cup)
