Step 1
Combine All-Purpose Flour (2 cups) , Baking Powder (1 Tbsp) , Salt (1/2 tsp) , Ground Cinnamon (1/2 tsp) , Ground Nutmeg (1 pinch) in a large bowl.
Step 2
Add Milk (2 cups) , Eggs (2) , and Canola Oil (2 Tbsp) , mix just until combined. Stir in the Sweet Potatoes (1/2 cup) .
Step 3
Pour batter by 1/2 cup measuring cup onto a greased skillet over medium heat. Wait until you see bubbles appear and flip to cook the other side.
Step 4
Enjoy with pure maple syrup. Serve and enjoy!
