Combine All-Purpose Flour (2 cup), Baking Powder (3 teaspoon), Salt (1/2 teaspoon), Ground Cinnamon (1/2 teaspoon), Ground Nutmeg (1 pinch) in a large bowl.
Add Milk (2 cup), Egg (2), and Canola Oil (2 tablespoon), mix just until combined. Stir in the Sweet Potato (1/2 cup).
Pour batter by 1/2 cup measuring cup onto a greased skillet over medium heat. Wait until you see bubbles appear and flip to cook the other side.
