Cooking Instructions

Step 1
Combine All-Purpose Flour (1 cup) , Baking Powder (1/2 Tbsp) , and Salt (1/2 tsp) in a large bowl.
Step 2
In another bowl combine Egg (1) and Unsalted Butter (2 Tbsp) .
Step 3
Zest the Orange (1) and set aside.
Step 4
Squeeze orange into a 1 cup measuring cup and add Milk (as needed) to make 1 cup of liquid. Pour into egg and butter mixture and mix well.
Step 5
Add wet ingredients to dry ingredients and stir just until incorporated. Fold in Autumn Olive (1/4 cup) and the orange zest.
Step 6
Pour about a half cup of batter into a cast iron skillet set over medium heat. Cook both sides until lightly browned.
Step 7
Serve with maple syrup and enjoy!
