Preheat oven to 350 degrees F (180 degrees C).

Make the seasoning mix: Mix together Chili Powder (1 tsp), Paprika (as needed), Ground Cumin (2 tsp), Cayenne Pepper (as needed), and Kosher Salt (as needed). Set aside.

To make the lime crema: Mix together Sour Cream (1/2 cup), Lime (1), and Hot Sauce (as needed). Set aside.

Bring Chicken Broth (2 cups) to a boil, add Quinoa (1 cup), turn down to a simmer, and cook for 15 minutes covered.
