Step 1
In a bowl, combine
Yellow Onion (1/2)
,
Garlic (1 clove)
,
Roma Tomato (1)
, and
Avocado (1)
with
Lime (1/2)
.
Step 2
Then, stack up the
Flour Tortillas (3)
and cut them in half lengthwise. Then, cut them into small ¼ strips.
Step 3
Place a medium-sized cast iron skillet over medium heat and then add the oil. Let the oil heat up for about 1 minute and then add the tortilla strips. Fry the strips for about 3 minutes, stirring constantly, until they are crunchy and golden brown.
Step 4
Next, add
Butter (1 Tbsp)
and then add the
Yellow Onion (1/2)
and rest of the
Garlic (2 cloves)
and cook them for about 2 minutes, until just soft.
Step 5
Then, scramble
Eggs (4)
in a bowl and season them with a pinch of
Salt (to taste)
,
Ground Black Pepper (to taste)
, and a dash of
Hot Sauce (to taste)
.
Step 6
Turn the heat on the skillet down to low and scoot the tortilla strips to the outer edges of the skillet. Then, add
Butter (1 Tbsp)
to the skillet and then add the eggs, and cook them, stirring gently for about 1-2 minutes, until just set.
Step 7
Then, remove the skillet from the heat and stir in
Salsa Verde (2 Tbsp)
. You can use tomato salsa if you prefer! Sprinkle on
Monterey Jack Cheese (1/3 cup)
and then top with
Sour Cream (to taste)
, and a dash of hot sauce. Enjoy!
